Just because the cost of "organic" foods go up at a faster rate than "conventional" groceries you can't factor that into % of product available only market share.

Wrong again; Austin, Texas is where the movement started, in 1980. the bay area didn't get involved in this "market" commercially until 1989; thanks to whole foods moving into palo alto.
